35 YEARS IN THE MAKING
Stan Delimitrou’s culinary journey began with a twist of fate (and a twist of pasta) at “Vic Ave Pasta and Wine” in Albert Park. As a 16-year-old newbie, he was taken under the wing of Head Chef Stefano, but it was Maria, the 70-year-old pasta maestro, who turned up the heat on his passion for cooking.
Maria was the guardian of the gnocchi, and she didn’t let just anyone into her doughy domain. But Stan’s enthusiasm was too al dente to resist. Starting with peeling potatoes and mastering the perfect boil, he quickly became Maria’s top noodle. Before long, he was the only other person trusted to roll out Vic Ave’s famous gnocchi—still using Maria’s secret recipe, but with his own saucy spin.
